China is such an enormous country that, over the years, Dim Sum of various kinds developed in different regions. From the north came hearty and flavorful buns. The south came up with more delicate Dim Sum, covering a big range of flavors.

"Dim Sum" was first used as a verb, meaning to snack in the Tang Dynasty (618-907 A.D.). During the Sung Period (960-1279 A.D.), it became the noun which is still used today. However, in those days, the snacking was done in mid- or late afternoon.
