This classic dumpling satisfies on three levels: appearance, texture, and taste. Ha Gow is made by chopping seasoned, raw shrimp with a bit of crunchy bamboo shoot. This filling is placed inside a circle of rice-flour dough, sealed into a distinctive pouch, and steamed.
