Cheung Fun
These are steamed strips of white rice paste with either bits of barbecued pork, or shrimp, or dried shrimp and coriander, or beef. The rice is ground in special machines designed for large volume. It is then mixed with oil and potato starch, spread onto sheets of fine white cotton, and steamed. The filling is put onto the pastry sheets which are then rolled and cut into strips about six inches in length. They are placed in long dishes with a dash of soy and vegetable oil.

Cheung Fun, no matter what the stuffing is, has a delicate sweetness. It is easiest to eat them by breaking the rolls into smaller pieces using your chopsticks.
